You can add additional desktop workspaces by selecting the (+)
You can move between spaces by selecting them, or by using three finger swipe left and right on your trackpad.

Who does this?
Using multiple desktops helps keep activities together. I use Desktop 1 for Email and Teams, Desktop 2 is for Teams Admin stuff, Desktop 3 tends to be code.
