In a teams meeting select ‘Show participants’
At the top of the participants list select the three little dots, and then download attendance list.
This will give you an attendance list in .csv format, so you can open it in Excel or Numbers or a plain text editor.
it looks like this.. but probably with a few more names in it…

You have to get it while the meeting is still open, as it’s in the participants area… best to leave it till the end of the meeting though as it generates the list at the point you click the button… but it does give a history of when folk joined and left. The other way people have been doing it is to ask students to post a “here” in the conversation… but that looks a bit messy.
