Meal for day before the race:

 

Breakfast- Pancakes

  1. Sift 124g of flour into a bowl and add 250g soya milk. Blend until batter smooth.
  2. Heat 2tbsp oil in a pan and put some of the mixture into the pan and cook for 1.5 minutes.
  3. Flip over pancake and cook remaining side
  4. Fry mushrooms and tomatoes, add remaining soya milk to create a sauce- add to the pancakes
  5. Top with pine nuts

 

Lunch- Curry

  1. Blend chopped onion, ginger, coriander and jerk paste into a food processor
  2. Once blended, mix in spices, tomatoes and vegetable stock
  3. Mix in 500ml of water and bring to simmer for 7 minutes
  4. Add sweet potatoes to the pan- simmer for 5 minutes
  5. Mix in chickpeas and peppers, season to taste
  6. Simmer for further 5 minutes
  7. Serve with rice

 

Dinner- Stir fry

  1. Mix 1 garlic clove, 1 tbsp of vinegar and puree into a pan. Add 100ml of boiling water
  2. Add the Peanut butter, blend in a food processor.
  3. Add boiling water to noodles and cook for 4 mins
  4. Fry the vegetables and chilli powder for 3 minutes and add the ginger
  5. Drain noodles and add into pan
  6. Mix well- serve with coriander

Snacks- Banana bread with peanut butter
